the Larimer St. spot didn’t turn out the way we planned. After looking
into it more deeply, we realized it would take many months and too much
money to get it up and running.
Libby’s family was here over
Spring Break and we decided that we should check out a coffee shop in
Fort Collins that operates in non-profit mode. We had been in contact
with the manager and thought it was worth checking out. While visiting
Kate and Rich’s new house, we made time to stop in and have some of
their fantastic coffee. Although the manager was not in that day, we
did get a chance to chat with the volunteers who were running the show.
It peaked our interest in non-profit status again. Everyday Joes was a neat place to visit and inspired us again.
funny thing was while we were sitting in the coffee shop, we got a
phone call from a spot that we had found just days before. We really
liked it and the location but thought there was no way that we would
get our foot in the door. Until the Thursday before this phone call,
the location was open for business as The Walnut Cafe. A small
breakfast and lunch spot in the heart of the business district. It is
one block from the capital building and diagonally from the Cathedral.
It is the perfect spot. We set up an appointment to go see it.
haven’t been able to bring ourselves to write about it here because
every time we write about a “perfect” spot, something goes awry. We
were just too excited about it to do anything to ruin it. We think we
are well on our way so we thought it time to update this.
location is at the corner of Logan and Colfax. It is 1500 square feet
upstairs with a basement for storage. We have pictures and we will post
them soon. We will let you know once all things are finalized. Keep
